Put points into dexterity and infuse it with a sharp gem and you'll be fine until the end, doing great damage. If you want to do strength or magic or something though, then you'll need to infuse with something else. Crystal infusion scales well with the Uchigatana for magic users with intelligence. Lightning infusion for miracles and faith.

I'd say the uchigatana is better, because of the moveset. Both of the iato's swings are broad sweeps, whereas the uchi's power attack is more overhand, which makes it more useful in tight hallways. Personally I preferred the Uchigatana infused with sharp, for the dx bonus. Its faster than the claymore. Str-based weapons are generally heavier and slower, but there are exceptions. Some weapons use both attributes equally, and are better when used in a build with equal Str and Dex, aka a "Quality" build.
